Hi, I’m the founder of Matki Kulfi Creamery, a venture born from my deep love for vibrant flavors of my childhood in Bombay, India. My love for cooking began early, with countless hours spent in the kitchen experimenting with recipes that filled our home with warmth and nostalgia. Cooking from scratch has always been a joy for me, and I’ve never shied away from a challenge in the kitchen.
One memorable summer day in Boston, I shared a treasured piece of my past with my 3-year-old daughter by making kulfi, the creamy, frozen dessert I grew up loving. As we savored the rich flavors on our porch, my daughter excitedly said, “Mama, you should sell this to everyone!” Her words sparked a realization in me—I had found the perfect way to share my creativity and a cherished part of my childhood with the world.
At Matki, we craft our kulfi using the traditional methods I learned growing up. As a purist, I believe in staying true to the process. We strive to source milk from local New England farms, cooking it slowly for hours and infusing it with timeless flavors like cardamom, rosewater, saffron, and nuts. The result is a caramelized, creamy treat that captures the essence of nostalgia and endures as a timeless delight.
Facts about Kulfi
• The word "kulfi" comes from the Persian word "qulfi," meaning "covered cup."
• Kulfi originated in India during the Mughal Period in the 16th century. It was traditionally made by slow-cooking milk with cardamom, rose water, pistachios, and saffron, then packed into terracotta cups called "Matki" and chilled in slurry ice from the Himalayas.
• Unlike many ice creams, kulfi is made without eggs or artificial stabilizers, giving it a rich, dense texture that melts slowly in your mouth, releasing a burst of flavors.
• Kulfi is made primarily from milk with very little cream, resulting in lower fat content compared to conventional ice creams.
• In India, you’ll find kulfi-wallas (kulfi sellers) offering this delicious conical shaped treat on streets across the country.
• Cardamom, a key ingredient in kulfi, not only adds flavor but also aids digestion by breaking down mucus in the ice cream with its mildly pungent and warming properties.
